Interesting! I’ve been interesting in doing some cooking with lentils lately. I never even knew they could be used in baking! Thanks for pointing this out. What a flexible food.

Me neither. I never thought about them for cookies.
But I guess, I use them in felafels and other fried kinda thingies so why not in some other snacky thing.
I wanna make them!
